@LavaHunter19 is right. We have a forums page for organizing these things. But then everyone left who organized it . . . the Gallery really isn't the same anymore.

I wouldn't know much about organizing contests but seeing as how Demarcation Media's contest went over really well and I don't think he organized anything, plus the ongoing Cursed Content Contest, I think you should be fine! Go for whatever idea you have if you think it'll be tons of fun for the rest of us!

Ya man, go for it, no one can stop you. Just make clear your start and stop dates and the title the contest projects entry should have. A once a week reminder helps keep the contest fresh in people's mind.
